Recipe of the Day: Jamaican Fried Chicken

With the world becoming more health conscious in recent years with the rise of Vegan, gluten-free and GMO free diets, people are more considerate of what they put in their bodies. Fried Chicken is one of those foods that has been kicked to the curb for healthier stewed, baked or grilled options. At the moment, we no longer serve Fried Chicken in our restaurants due to us streamlining our menu offerings in the past few months. However, Fried Chicken should not be tossed into oblivion because of a little extra cholesterol which we can get from eating a lot of other foods that we consider “healthy.” Today we give you a tasty, crispy recipe for some Jamaican Fried Chicken. For all the Fried lovers out there, whether you’re from “down-south” or elsewhere, this Fried Fowl recipe will have you wanting more. Calories, cholesterol…who??? After all, its about moderation. Ingredients

  • 2 pound(s) chicken pieces
  • 1/4 cup(s) White Vinegar
  • 5 cup(s) water
  • 2 stalk(s) scallion, chopped
  • 1 medium onion, chopped
  • 4 clove(s) garlic, chopped
  • 1 1/2 teaspoon(s) scotch bonnet pepper, chopped
  • 2 sprig(s) thyme
  • 1/2 teaspoon(s) salt
  • 1 tablespoon(s) All Purpose Seasoning
  • 1 tablespoon(s) Chicken Seasoning
  • 2 cup(s) Vegetable Oil
  • COATING:
  • 1/2 cup(s) flour
  • 1 teaspoon(s) baking powder
  • 1/2 teaspoon(s) Black Pepper
  • 1 packet(s) Pimento, Ginger and Garlic Seasoning
  • 1/4 teaspoon(s) salt
  • SAUCE:
  • 1 cup(s) Pineapple Juice
  • 1 cup(s) chicken stock*
  • 1 piece(s) ginger, grated
  • 1/2 cup(s) Tomato Ketchup
  • 1 cup(s) Pineapple slices, diced

Fried Chicken Directions

Clean chicken in a mixture of White Vinegar and 4 cups water.

Blend the next eight ingredients with the remaining 1 cup water.  Pour the marinade over the chicken, rub in and leave chicken to marinate for 2 hours or overnight.

Place chicken pieces along with the marinade in a heated heavy bottom skillet.  Cover and simmer over medium heat for 30 minutes.

Combine flour, baking powder, black pepper, Pimento, Ginger and Garlic Seasoning and salt in a bowl and mix well.

Remove skillet from flame; drain chicken pieces from the seasoned liquid and coat in the flour mixture.

Heat Vegetable Oil in a skillet and use to fry the coated chicken pieces until golden brown; drain on absorbent paper.

Combine Pineapple Juice, chicken stock, ginger, ketchup and the diced Pineapple Slices in a saucepan over medium flame.  Bring to a boil, lower flame and cook for about 15 minutes.

To Serve:  Drizzle pineapple sauce over the fried chicken and serve with boiled rice and a tossed vegetable salad.

Recipe NoteChicken Stock: Boil 1 packet Grace Cock Soup Mix with 2 cups water for about 5 minutes.  Strain and use as directed.
