Recipe of the Day: Jamaican Banana Diabetic Bread

Disease is unfortunately a part of our existence as humans. Sickness and poor health claims countless lives each day because many who suffer from these ailments do not know how to properly adjust their diet to suit their health needs. For all the diabetics out there, today we give you a tasty but not too sweet recipe for Banana Bread. This recipe uses Splenda instead of sugar so you can chow down without any worry. Ingredients

For 6 people

  • 1/2 cup(s) cashew, chopped
  • 1/2 cup(s) Vegetable Oil
  • 4 teaspoon(s) butter milk
  • 1 1/2 tablespoon(s) Splenda
  • 1 teaspoon(s) vanilla essence
  • 2 cup(s) whole-wheat flour
  • 2 whole eggs
  • 1 cup(s) raisins, soaked
  • 1 teaspoon(s) baking soda
  • 3 large ripe bananas, mashed

Banana Diabetic Bread Directions

 Sift whole-wheat flour and baking soda together.  Add Vegetable Oil and Splenda and mix until light and foamy.

Fold in the eggs, mashed ripe bananas, butter milk, vanilla, soaked raisins and cashew.

Scrape batter into a greased loaf pan and bake at 180°C/350°F for 25-30 minutes or until a skewer inserted comes out clean.

Allow to cool before slicing.
