Recipe of the Day: Jamaican Brown Stew Pineapple Chicken

If you know Jamaican food, then you should be accustomed to Brown Stew Chicken, but if not, it is nothing difficult. It is simply Chicken cooked down in a great tasting stew. Today we give you a little twist to that recipe however, with the addition of pineapples. Check out the recipe below.

Ingredients

  • 1 cup(s) Vegetable Oil
  • 1 teaspoon(s) Browning
  • 2 stalk(s) escallion, chopped
  • 4 whole chicken breasts
  • 1 can(s) Pineapple slices
  • 1/4 teaspoon(s) salt
  • 2 clove(s) garlic, minced
  • 1/4 cup(s) Vinegar
  • 1 cup(s) Tomato Ketchup
  • 1/4 teaspoon(s) scotch bonnet pepper, de-seeded, chopped
  • 2 sprig(s) thyme
  • 4 cup(s) water
  • 1 medium onion, chopped

Brown Stew Pineapple Chicken Directions

De-bone chicken breasts and wash in a vinegar and water solution.

Marinate in Browning, salt, pepper, chopped onions, escallion, garlic and thyme.

In a frying pan heat Vegetable Oil, stir fry chicken breasts to a light brown color; pour off excess oil.

Add seasoning, reserved pineapple juice from the can of pineapple slices and Tomato Ketchup to the chicken breasts; simmer for 5 minutes.

Add pineapple slices about 2 minutes later and simmer for a further 2-3 minutes on a low flame.
