Who doesn’t know Corned Beef (or as we call it in Jamaica, Bullied Beef)? Who doesn’t know rice? Well I am sure most people know these two popular products anywhere you are in the world. They are easy to prepare and can be eaten anytime of the day. Today we are going to make these products even easier to prepare by mixing them together into one dish called Jamdown Corned Beef Seasoned Rice. So grab your ingredients and start cooking. For 4 people ()
- 1 packet Cock Soup Mix
- 4 cups water
- 2 cups Rice
- 1 medium onion, chopped
- 1/4 cup chopped sweet pepper
- 1 medium tomato, chopped
- 2 cloves garlic, minced
- 2 teaspoons Scotch Bonnet Hot Pepper Sauce
- 1 can Whole Kernel Corn, drained
- 1 can Mixed Vegetables (optional)
- 1 can Corned Beef
- 0 Garnish:
- 1/2 cup carrot, fine diced
- 2 tablespoons escallion tops, chopped
Combine Cock Soup Mix and water in a saucepan and bring to a boil.
Add Rice, onion, sweet pepper, tomato, garlic and Green Scotch Bonnet Hot Pepper Sauce.
Cook until water is completely absorbed and rice grains are tender.
Stir in the Whole Kernel Corn and mixed vegetables, if used, then Corned Beef and cover.
Cook for a further 3 minutes, then toss with a fork.
- Add garnish (carrots and escallion), stir in and serve hot.
