Recipe of the Day: Jamaican Fruit and Vegetable Salad

Ingredients

For 6 people ()

  • 3 medium oranges
  • 2 small beets
  • 1 medium carrot
  • 1 medium cabbage
  • 1 medium green sweet pepper
  • 1 can Grace Pineapple Slices, reserving liquid
  • 2 sprigs parsley
  • 0 To Make Pineapple Syrup:
  • 1 cup Pineapple Juice (from the pineapple slices)
  • 2 ounces sugar
  • 1 tablespoon lime juice
  • 1 tablespoon liquidized ginger

Directions

  1. Wash all fruits and vegetables thoroughly.
  2. Cut oranges into segments, peel beets, cut into small 3 mm (1 or 8 inch) cubes and blanch, finely shred carrots, coarsely shred cabbage, cut sweet pepper into julienne and cut Pineapple Slices into pieces.
  3. Arrange orange segments around the edge of a platter, overlapping segments.
  4. Arrange the remaining fruits and vegetables in lengthwise rows, keeping each item separate.To Make Pineapple Sauce:
  5. Bring all ingredients to a boil in a saucepan.
  6. Reduce until mixture becomes a syrupy consistency.
  7. Chill and serve with salad. 
  8. Method Note: Blanch – To immerse briefly in boiling water, then into icy cold water.
  9. To Serve: Garnish with parsley.  Add pineapple sauce or your favourite salad dressing.
