Baked Chicken is a popular delicacy all over the world, and in Jamaica its no different. However, we have special ways of making everything, no matter how ubiquitous, our own. Today we give you a recipe for Tropical Baked Chicken with Guava Glaze. Get your items ready and get the oven heated.
For 2 people ()
- 1/2 medium chicken, jointed
- 2 ounces chicken seasoning
- 3 fl oz soy sauce
- 1 ounce onion, blended
- 1 ounce escallion, blended
- 1 teaspoon thyme, blended
- 1 teaspoon scotch bonnet pepper, blended
- 1 ounce garlic, blended
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon paprika
- 1 teaspoon Browning
Wash, clean and cut chicken into joints, set aside.
Season chicken with chicken seasoning, soy sauce, blended seasonings, salt, black pepper, paprika and browning. Marinate for 24 hours.
Pre-heat oven to 180°C/350°F.
Place chicken on a baking tray, skin side up, and bake until clear juices run from the joints of the chicken. This should take about 45 minutes to an hour.
Remove chicken from the baking tray and place in a hotel pan. Pour on sauce over the top of the chicken. Cover the baking tray with aluminium foil and return to oven. Reduce temperature to 150°C/300°F for another 15 minutes.
Recipe for Guava Glaze
- 2 bottles 16 oz Fruit Juice, preferably with Guava
- 2 ounces ginger, chopped
- 4 ounces granulated sugar
- 2 ounces corn starch
- 1/8 teaspoon yellow food coloring, optional, (use as needed)
In a sauce pot add Fruit Juice, ginger and sugar, bring to a boil.
Allow sauce to simmer for no less than 30 minutes.
Bring the sauce back to a boil then thicken with corn starch. Sauce must be thick enough to coat the back of a metal spoon.
Adjust color if desired with yellow food coloring.Serve with baked chicken.Enjoy
