Today our recipe is Saltfish Stewed Peas. The saltfish plays a major role in many Jamaican dishes and it is even a part of the national dish (Ackee and Saltfish). Therefore there are many creative ways to cook up this fish on the island. Check out the recipe below.
For 4 people ()
- 12 1/2 cups water
- 2 cups dried red peas, pre-soaked
- 1 piece ginger, crushed
- 4 whole pimento berries
- 3 cloves garlic, crushed
- 1 packet Coconut Milk Powder
- 1 cup flour
- 1/2 cup Cornmeal
- 1/8 teaspoon salt
- 1 pound saltfish, soaked and flaked
- 1 packet One Pot Seasoning – All Purpose
- 1 whole scotch bonnet pepper
- 1 medium onion, chopped
- 2 stalks escallion, chopped
- 1 sprig thyme
Pour 8 cups water into a pressure cooker. Add pre-soaked red peas, crushed ginger, pimento berries and crushed garlic; pressure cook for twenty five minutes.
Remove pressure cooker from flame and allow to fully cool before opening. Return to flame and add 4 cups water, Coconut Milk Powder, mix well and bring to a boil.
To Make Spinners:
Combine flour, Cornmeal, salt and remaining water, knead until a firm dough is formed.
Take small pieces of the dough and roll into spinners. Add spinners, flaked saltfish, One Pot All Purpose Seasoning, whole scotch bonnet pepper, chopped onion, escallion and thyme and stir well.
Cover and leave to simmer for 15 minutes or until thickened.
To Serve: Serve with boiled White Rice and a tossed salad.
